How to Make Homemade Chickpea Schnitzel

Cook the chickpeas for 45 min or until soft.

Put the chickpeas in the food mill or food processor.

In a large bowl, mix well with your hands the chopped garlic, parsley, salt, pepper, and cumin.

Then add the flours and work the dough until it forms a soft ball. If, after working it for a while, it is still dry, add a bit of the cooking water.

Flour a clean surface and roll the dough until it is 1 centimetre thick.

Cut the Schnitzels using a cookie cutter or an upside-down bowl.

3 Chickpea Schnitzels are boiled in a saucepan.

In a large saucepan, add less than half the pan with water, sea salt, and the bay leaf.

Bring to a boil, add 2 or 3 Schnitzels, and cook for about a minute until they float.

When they float, take them out with a spatula and leave them on the counter for 5 minutes to dry a bit, but not totally.
