How to make homemade spelt flour pasta step by step

Making homemade pasta using spelt flour is a simple and fulfilling task, and a lovely activity to do with your kids.
Fresh pasta is a nice change from the ready-made pasta, and why not include your kids in the making process?

Spelt
Spelt flour is an ancient grain flour that works well in all baking. It has a delicious, wheaty, nutty flavour, is high in nutrients, and higher in fibre, fat, and protein than most wheat varieties.
Because it is not a highly processed grain, it contains less gluten than wheat flour, making it easier to digest and a better choice for individuals who can’t tolerate gluten.

Different ways to make homemade spelt pasta:
You can make it entirely by hand with a rolling pin and knife.
By hand and a pasta machine, which children get very excited about!
You can also just put all the pasta ingredients in a food processor or a dough mixer.
If you want to create a more meaningful experience for your children, I recommend making it by hand.
I will go through the two processes of making homemade spelt pasta, with the pasta maker and by hand.
How to make homemade spelt pasta
With pasta machine:
Ingredients per (adult) person:
- 1 egg
- 100 grams of white Spelt Flour
- 1 tsp Sea Salt
- 1tbsp of Olive Oil (optional)
What you need:
- Pasta machine
- A fork
- A dough cutter (optional)
- Pasta drier (optional)

Method:
Mix the spelt flour with the salt in a bowl or on a clean work surface.

Make a hole in the middle and add the eggs and oil. Mix it with a fork and start adding the flour, working it with your hands until you have a smooth dough.




Knead the pasta dough for 15 minutes and let the dough rest for half an hour at room temperature.
Divide the dough into pieces and, starting with the thickest setting on the Pasta machine, start stretching the divided dough into pasta sheets.
So start in 7 (thickest), and pass it once, sprinkle flour, fold it and pass it one more time on set 7.
Then move to the next set, 6 or 5 and repeat the process time on 5 and then keep going down the settings, repeating the process until 2 or 1 (thinnest).



When the pasta sheets are the desired thickness, pass the flattened dough through the cutting mode.
The ideal thickness would be thin enough that when you blow the dough it moves.


Choose the pasta shape you want: fettuccine (wide noodles) or spaghetti (thin noodles). Sprinkle the work surface with flour
Every time you finish cutting a pasta sheet, sprinkle the pasta with more flour and let it air dry for 20-30 minutes.

COOKING:
Cook like any other type of pasta, in salted water in a saucepan and bring it to a boil. Once boiling, add the pasta gently to the boiling water.
Cook for about 5 minutes or until you see the pasta floating.

Rinse, add butter or oil and serve with parmesan cheese, tomato sauce or homemade pesto.

Variations:
You can simply change the spelt flour to any type of flour: whole grain spelt flour, white wheat flour
How to cut the pasta without a pasta machine:

(The recipe. It is the same as with the pasta machine.

Divide the dough into the amount you made per person.
Start by stretching the dough with your hands first, then with the rolling pin.
Sprinkle with flour.
Then, fold in half and then fold it again, and stretch with a rolling pin.


Open it and stretch it again, sprinkle with flour and fold again. Do this as many times as you need to get the dough thin enough.
Stretch it a bit more, and then sprinkle with flour and start rolling it. (as shown in the pictures)


With a Sharp knife, cut the dough into the width you want your pasta, around 1cm.
Sprinkle with flour and let rest for 20 minutes.
If you have one, you can hang the pasta to dry on a pasta drying rack; otherwise, just leave them on a flour surface.
Simple Tomato sauce

This is a simple tomato sauce recipe to go along with your pasta.
It has some optional vegetables, which are a great way for your kids to eat vegetables. You can add and “hide” all those vegetables that your child would not eat!
I like to start preparing it while the pasta dough is resting.
You will need:
Ingedients:
- 3 or 4 cloves of garlic
- 1 small onion
- Salt and pepper
- oregano, basil,bay leaf
- Fresh or tin of tomatoes
Optional:
- Carrots
- pepper
- Croquette
- Mushrooms
Method:
On a cutting board, with a sharp knife, chop the garlic and onion

Heat a saucepan with a bit of olive oil, and cook the onion over low heat.
When the onion is transparent, add the garlic. Subsequently, add the vegetables, if any.
Then add the tomatoes and water, stir and add condiments.
If adding fresh condiments like basil or oregano, add them just before you finish cooking.
Cook for 30 minutes to an hour at low heat. Stirring occasionally and making sure it doesn’t dry up.

Pesto:

Ingredients
- Fresh basil leaves
- 1 small Garlic clove
- Nuts
- Lemon (optional)
- Parmesan cheese.
Method
First, in a mortar and pestle, crush the nuts until creamy.
Then, cut half a garlic clove and crush it in.
Add the basil and mint and crush.

And to finish, grate the cheese and add the olive oil, and crush them together until the desired consistency.
