Mandarin orange cake recipe, fresh and delicious!

This mandarin cake is a straightforward and delicious cake to make.

Before you discard overripe mandarin oranges, why not use them in this delicious cake?

This mandarin orange cake is made with the goodness of mandarins and whole ingredients.

I like making this mandarin cake when I have mandarins that would otherwise go bad, and it makes a tasty treat for my family.

The citrus flavour is lovely on winter days and is also a nice reminder of the luxury of having such fruits as citrus in cold countries at this time of the year. And it’s great to have them in a delicious cake.

This mandarin orange cake is one of the easiest cakes to make. It will take less time if you have a blender or a food processor, but if you don’t, it’s not difficult to do without. After you chop the mandarins, you can either use an electric mixer or a hand whisk to mix the rest of the ingredients.

It only takes five ingredients that we usually always have at home: oil, eggs, sugar, flour and fruit.

  • 3 Mandarins plus one for decorating.
  • 50 ml of oil, you can use any oil or replace it with butter.
  • 3 eggs
  • 2 cups of self-raising wholemeal flour. You can replace it with white self-raising flour, or wholemeal flour and 2 tsps of baking powder and 1/2 tsp of salt.
  • 1 cup of sugar, I use Muscovado sugar.
  • Icing sugar.

Wash the mandarins and add the whole mandarins (zest and all!) to a food mixer or blender. Or by hand.

Blend until you have a fruit puree.

Then add the eggs, oil, and mix.

Then add the sugar and blend.

Add the self-raising wholemeal flour and mix all the ingredients well.

Pour the mixture into a cake pan or bread tin. cooking time:  approximately 30-35 minutes at 180 °C, or if you insert a knife and it comes out clean, it is ready.

Let the cake cool down to room temperature.

Mix 4 tablespoons of icing sugar with a few drops of mandarin juice, but you can replace it with orange or lemon juice, until you get a nice viscous consistency.

Pour the icing over the top of the cake with a spoon.
