Mandarin orange cake

Equipment

  • 1 food processor optional
  • 1 cake pan
  • 1 small bowl

Ingredients
  

  • 3 mandarins
  • 50 ml oil or butter
  • 3 eggs
  • 2 cups Self-raising wholemeal flour
  • 1 cup sugar
  • 4 tbsp icing sugar for decorating

Instructions
 

  • Wash the mandarins and add the whole mandarins (zest and all!) to a food mixer or blender.
  • Blend until you have a fruit puree
  • Then add the eggs, oil, and mix.
  • Then add the sugar and blend.
  • Add the self-raising wholemeal flour and mix well.
  • Pour the mixture into a cake tin or bread tin. cooking time:  30-35 minutes at 180 °C or until if you insert a knife comes out clean..
  • Let the cake cool down to room temperature.
  • for the icing:
    Mix 4 tablespoons of icing sugar with a few drops of clementine juice, but you can replace it with orange or lemon juice|, until you get a nice viscous consistency.
    Pour over the top of the cake with a spoon.
    Grate mandarin zest or orange zest
    And decorate
