What Is Chickpea Schnitzel?
Chickpea schnitzel is a vegan alternative to traditional schnitzel. Instead of meat, mashed chickpeas are combined with herbs, seasonings, and breadcrumbs to create hearty patties, then coated and cooked until golden and crisp.

- 1 cup of cooked chickpeas
- 1/4 cup of Tapioca flour
- 1/4 cup of spelt wholemeal flour
- sea salt
- 1/2 tsp of ground cumin
- Peper
- 2 garlic cloves, chopped
- 1 tbsp of fresh parsley, chopped
- 1 Bay leaf
- 1/2 cup of bread crumbs
- Oil for cooking

How to Make Homemade Chickpea Schnitzel

Cook the chickpeas for 45 min or until soft.
Sieve over a bowl to keep the cooking water.

Put the chickpeas in the food mill or food processor.
In a large bowl, mix well with your hands the chopped garlic, parsley, salt, pepper, and cumin.

Then add the flours and work the dough until it forms a soft ball. If, after working it for a while, it is still dry, add a bit of the cooking water.
Flour a clean surface and roll the dough until it is 1 centimetre thick.


Cut the Schnitzels using a cookie cutter or an upside-down bowl.


In a large saucepan, add less than half the pan with water, sea salt, and the bay leaf.
Bring to a boil, add 2 or 3 Schnitzels, and cook for about a minute until they float.

When they float, take them out with a spatula and leave them on the counter for 5 minutes to dry a bit, but not totally.

In a small bowl or plate, put 1/2 cup of breadcrumbs and cover each Schnitzel.

Leave them on a plate to cool down.
Heat enough oil to fry the Schnitzels. Once hot, fry one side until golden, then turn and fry the other side.
You can bake them in the oven, turning the Schnitzels halfway.
